Hi, I’m Nicolette.
I have over 20 years of experience in the Food and Beverage industry and hold a qualification in Foodservice Management. I specialise in Quality Assurance, including GFSI auditing and Business Development.
Quality, along with the training and coaching of people, has always been an aspect of my work that I truly enjoy.
In 2010, I founded my own Patisserie Training Academy, La Petite Patisserie, in Cape Town, South Africa. This enabled me to combine my passion for patisserie with coaching and delivering training programmes, all underpinned by a strong focus on quality awareness.
Seven years ago, we as a family of three, moved from South Africa to The Netherlands. I began working as a Food Quality Consultant within the bakery industry. In the summer of 2023, I joined McCain Foods, and thereafter worked in Quality Compliance at Danone Nutricia.
For several years now, I have been working as a freelance QA consultant in the auditing field and currently own QSpec Training and Solutions.
As a qualified FSSC22000 and ISO9001 Auditor, I am able to build and implement these standards immediately into your QMS system.
I enjoy the flexibility and diversity that comes with working on a wide range of QA projects. I am passionate about building strong brands for small businesses and developing capable, confident teams that can effectively manage day-to-day operational challenges.
Recently I finished writing my book, The Home Baker’s Guide to Food Science - Discover Why Baking Works, which serves as a practical refresher for food science students, as well as an accessible guide for first-time bakers and aspiring small business owners who want to better understand the science behind baking.
In addition, I offer food styling and photography services, which provide a creative outlet that balances my analytical and process-driven work. You may find examples of my photography under the recipe section.
