Sweet Potato, Spinach and Feta Quiche
I like the idea of having quiche for lunch. It’s a no-nonsense approach to eating healthy. Simple and do-able by all :)
Other versions would be by replacing the sweet potato with pumpkin, ham and cheese, leek and mushroom, chicken mushroom, tomato and basil but the list and options are endless.
By definition a quiche is a baked, egg-based tart, savoury, and almost always topped with cheese and served within a tart base.
This quiche however has no tart base, and only has feta and nuts sprinkled on-top therefore, also gluten-free!
I added cinnamon and nuts as a variation from tradition. In fact, the sweet potato was leftovers from a previous meal I made and with a few other ingredients it was so quick to create this dish.

Sweet Potato, Spinach and Feta Quiche
Preparation time: 10 minutes
Baking time: 45 minutes
Serves: 6
Ingredients:
4 Sweet Potatoes (600g), cleaned but not peeled then sliced
Olive oil for roasting and greasing
2 onion, diced
1/2 leek, sliced
1 garlic clove, crushed
Sea salt and black pepper to taste
1 tsp cinnamon
1 tsp turmeric
1/2 tsp paprika
1/2 tsp curry powder
1/2 tsp dried or fresh thyme
3 whole eggs
1/2 tsp baking powder
2 1/2 cups baby spinach leaves
200g Feta cheese
Mixed nuts as optional for decoration
Method:
Preheat the oven to 200°C. Place the baking paper in a sheet pan.
Cut the sweet potato into slices, place them onto the sheet pan, add onions, leek, crushed garlic, and all the seasoning.
Drizzle the olive oil over the vegetables and toss to mix.
Roast the sweet potato and vegetables until soft or for 20 minutes.
Remove the vegetables from the pan into a heatproof bowl and allow to slightly cool down.
Reduce the oven temperature to 180°C.
By using a stick blender or potato masher, mash the vegetables untill a fine consistency.
Add the baking powder and 3 whole eggs. Mix well or blend with a stick blender.
Add the spinach leaves last and gently fold it in until well distributed.
Prepare a quiche dish by adding a teaspoon of olive oil to grease the dish.
Add the filling, sprinkle the feta cheese and chopped nuts before baking it in a preheated oven of 180°C, for another 25-30 minutes.
Remove from the oven when the quiche feels firm and well set.
Serve warm with a green salad.
